I think Pig could cure vegetarianism, they just have to take that first step. It's like getting over an addiction.

It is called "The Next". Heard good things but have not yet tried it.

Why pick on Pig? I mean it must be 99% of restaurants that serve meat.
And I would wager Pig sources their meat more ethically than a lot of other restaurants.

Not only that, Pig is quite up front about the farm-to-table connection. Many people argue that the excess consumption of meat is tied to the idea that your average person doesn't have a strong connection between the living animal and the meat on their plate, so really IMHO Pig is actually pretty forward thinking in this respect, as their damn restaurant is named "Pig" and they have pictures of pigs in their restaurant.
Perhaps vegans are picking on them because they are so upfront about it. If they were called "Johnny's house of cornbread" it wouldn't have been selected as their target?

I asked PIG on Facebook about a year ago where they got their pigs from, and the response was Sysco. Things could have changed, but I doubt Sysco is getting their pork from the same place someone like The Whole Beast is getting theirs.
