Looks like their really into ashes and burnt stuff, could be interesting. I'm not sure about the onions cooked in Ash though - ashes? Ash tree? Ash what?

Just an FYI, those prices are for 3oz and 5oz servings. Restaurants typically offer 6oz and 9oz servings.

$32 for spring salmon...seriously? Do I get the whole salmon? At the very least I presume its BC (wild) salmon. For that price I can catch my own. That said it has a nice look which as Jonny noted is very 'un'-Victorian (definitely a good thing). Since I moved away from the CSV neighborhood I don't get downtown as much as I used to, but I imagine we'll give it a try at some point soon. Looks promising any way.

I understand for that price you are given the opportunity to swim with your chosen entree before it gets hooked, cooked and slapped on your plate. It's a contemporary take on picking your lobster from a tank in the restaurant.
