I was talking to a guy at work the other day (he’s probably early 40s) and we got on the topic of Caesar salads. I mentioned how I missed getting tableside service when you ordered Caesar at a “fancy” place. He had no idea what I was talking about…and was a little incredulous when I described what I meant. Wow! Has it really been that long? It was such a big (impressive) production as they rubbed the garlic around the wooden bowl and mashed in the anchovies and coddled egg, poring the oil and vinegar from a great height with a flourish. A little entertaining banter (or not…they seemed to know when to engage you and when to just keep quiet and make the salad). It must be a lost art. Is there anywhere in Victoria that still offers this?

The last time I had a tableside-created Caesar salad I was in Mexico more than 15 years ago.

one time i was at the restaurant across from butterfly gardens (joey something or other?) and the waitress dropped an entire pasta paste on the lap of a person i was having lunch with.
that was something to see. but i don't think that was a recurring event. certainly we never saw that on the menu.

It is an art to have this done right. Not sure of anywhere in Victoria that does this.
We get this done once or twice when we splurge in Mexico.

...looks like the Victoria Harbour House still does it. They have a "Classic Caesar salad for 2 made tableside" on their menu.

Hy's Steak House still does tableside Caeser Salad. Well, at least pre-Covid. But then you'd have to go to Whistler or Vancouver for that...

Had this done at Hy's Vancouver and Edmonton (now closed). It was very good.

Does anyone remember Hy's Steak House in the Village Green Inn in Duncan? I always thought is strange that they had a Hy's beside the local strip club.....

...The chef went out to do a cherries jubilee after getting into the brandy himself. Long story short, too much booze=large explosion of flaming cherries all over the dining room...
I remember seeing this on an episode of Frasier back in the 90s.
