I thought it would be worth more. Get some decked out Caesar’s in mason jars and fried chicken and waffles going on weekends, lined up down the block, worker dudes eating bacon and over easy eggs during the week.

I guess a "kitchen fire"  and "temporary closure" is a good public-facing explanation - but of course those immersed (either directly or indirectly) in the food and beverage industry here in town already know that they're closed because the entire working kitchen staff all quit at the same time.

There was a kitchen fire, too. Esquimalt Fire was called in. It wasn’t very big, though.

The restaurant industry is so fickle. Even if you’re doing everything right as a boss, another restaurant or restaurants will unabashedly work at siphoning away your best staff. The feeling of not being in full control must be draining after a while. And there is only so much give you can afford to appease your staff.

Apparently, the fire was so small that it was nothing that would have prevented them from opening the next day, or at most the day after. 

 

Based on the local restaurant RedIt posts, this all had very little (actually nothing at all) to do with "appeasing the staff", and a lot to do with management informing staff that they would be withholding all of a days tips for a payout to management - this as payback for staff "making managements life difficult"

 

Restaurant business being fickle (which it certainly can be) aside - it's illegal in B.C. for management to keep tips - for any reason, especially as some sort of punishment against working staff.

Cooks, good career ones anyways, often become loyal to a good chef and will follow them if the opportunity is there.

While the last part is true, the first part isn't exactly. Managers in BC can only receive tips if they regularly perform the same frontline work as the tipped employees. source

I'm just referring to the industry in general, not this specific situation. You're damned if you do, damned if you don't.

 

Also, social media is not necessarily a good barometer of what's true and what isn't. People will say the darnedest things when they're anonymous.

"Bunwagons" are an integral part of the food and beverage scene in Victoria, but can be relatively unknown for those who don't work in local industries that see their daily visits. 

 

My bunwagon experience started in Grade 11 and 12 at Vic High, when the bunwagon would visit the shops on the technical side of the school in the morning, and again in the afternoon. 

 

Out of school, and working at a small factory in Rock Bay, the bunwagon would visit us once each weekday just before lunch, whereupon you could purchase anything from a snack to a solid, fresh (made that morning) lunch.

“Today’s Lunch Company” used to send out a fleet of drivers with lunch offerings for offices and other workplaces. Not so much a lunch wagon, but also a unique service.

I think they might have closed up. Surely food courier options could lead to a dry up in business.

What’s the barrier to entry for this business? Anybody can pull up to any job site, no? So you are essentially just buying a truck?

Perhaps what the business provides is on-site access at friendly construction sites. But that can also be curtailed by legislation at any moment, or you may be restricted in some way at any time.

Ya, it has probably built up a reputation to be allowed not just on what you might call temporary construction work-sites but also maybe other places like say the Viking Air hangar or similar.

Take a look at Matthew Green on socials, he runs a cafe and a few of these trucks out of new west.

Tidy business, no doubt, but 7-3, Monday to Friday? Who’s doing the shopping, the prep, the cooking, the cleaning, the loading and unloading, the truck repairs, the books, etc? You are buying yourself a 50+ hour a week job.

My wife’s former workplace had a lunch truck visit a few times a day, folks time their breaks to when the truck comes. I think it just looped around downtown, car dealerships, mechanics, construction sites.
