In the TC article yesterday, the Pig owner said he just kind of got tired of it all.  And he knew the quality was slipping when he was not around.  Oh, and that West Shore was burning through downtown's profits.

I never met Jeff, but a couple times we did business it was with Michael Hoffmann, but I think he left some time ago, maybe you know Matt?

Nope.  Not familiar with the operation much.  Went to the cubby hole on View St. a few times, never once in the new location.  Jeff's right tho, it's a terrible business to make no money in.  If you aren't making decent money or extremely passionate about the service, why bother.  Might as well work at the grocery store.

Matt.

Good news, but FYI you can also buy packages of vacuum-sealed pulled pork from The Whole Beast on Oak Bay Avenue. Heat the package up in boiling water for 10 minutes and you've got enough for 6-8 bunwiches.

Anyone want to know how to braise and pull a pork butt PM me. :)

I do not think this has anything to do with the original Pig restaurants, as the food truck was for sale for a long time and the fellow who started the company moved on to other things. I might be wrong though!

It is not the food truck. It sounds like the original owner is going to prepare the ingredients for the sandwiches for pick-up, like “you bake” style pizza. His farm is up in Cowichan, is it not?

Sadly it appears to be the result of his other work being a casualty of COVID-19, and him having to return to something he knows how to do - really good pulled pork.

Cooking your pulled pork is easy enough.   I do it about 5 times a year with a 5kg shoulder.   I do it in the oven and it turns out better than most of the pulled pork available in this city

If that's the case I'm gonna stock up on some Stouffer's Frozen Entrees and call myself The Herald Street Caffe!

Sure, you can do it yourself via a variety of methods. My instant pot can turn a pork shoulder into pulled pork in a couple of hours plus finishing, for instance.

I'm still excited to get a Pig order in if I can. Yum!

Make pulled pork probably monthly, Pigs sauce is what makes it for me.

Interested to see how this does, hopefully Jeff finds it passionate again and starts up something

Oh yeah, that’s good stuff.

That and Mo:Le’s sauce are two of the world’s best sauces, I swear.
