not just any cheese, St. Agur blue. This is in a salad at the Bard and Banker and I've also had it at Stages, and it's the most divine blue cheese. Short of driving to Choux Choux Charcuterie, Ottavios, etc. etc., does anyone know offhand where I could get this cheese in Victoria? THanks in advance for anyone who saves me the gas and the time.

I find that if "the cheese get more binding" it will not save you much gas.

You might want to pick up the phone and call the deli nearest you. You might even want to try Thriftys.

Charelli's in Oak Bay has an excellent cheese selection. Long shot might be the Italian Deli.

Depends what you want to pay. Thrifty's is good, the Italian place on Blanshard is good, everything else is $$$.

^ I am doubting that Thrifty's would have something so specific. Choux Choux is most likely your best bet.

Despite the OP's concern, IMHO Choux Choux is THE place to go for specialty cheeses in Victoria. Try their Valdeón Blue*...YUM! :D

I don't think St. Agur is much of a specialty cheese anymore, and I bet Thrifty's would have it, at least the Hillside store.

Thrifty's would also have a selection of similar quality, mild double cream blue cheeses for you to try.

A good subsitute for Augur might be Dolcette cheese.

Translated literally the name means "sweet milk". Dolcelatte cheese is similar to gorgonzola with a melt-in-your-mouth, creamy texture. The fat content is about 50%. Use on your cheese board served with grapes or use it in a rich pasta sauce.

So you could end up with Gorgonzola which is much easier to come by.

I've enjoyed the cheeses from Hilary's on Fort across from the Mosaic building. They're knowledgeable and will let you taste a cheese before you buy it. They have a mix of their own cheeses and various locals and imports.
