Did someone already post about Hotel Zed/Mandy Farmer building a new live fire restaurant in Tofino?

Called “Roar”. Somehow Eric Pateman (Edible BC / Edible Canada) is involved.

Don’t seem to have a live website yet, but the FB page is useful.

Live fire restaurant. I would assume they use only open wood fire for cooking instead of a wood stove or natural gas range.

So like catered camping with silverware instead of sporks.

why would you want to do that? Chances are we don't have that good genes why not pick from a big list of genetic donors?

Yes, I’m assuming the same, but expect the quality will be somewhat better than wieners on a stick. They claim to be the first live fire restaurant on the West Coast. Of Canada? North America? I don’t know.

We went to a one star place outside of Bilbao a couple of years ago, called Asador Etxebarri. All live fire. They had one gas fireplace just to get the wood started, everything else cooked over various types of wood using racks on a pulley system to raise and lower the grills to control the heat. Took a tour of the kitchen after lunch, Chef was roasting cacao beans to make chocolate for the next days soufflé. Can’t wait to go back.

Carbon neutral but puts lots of pollutants in the air.
