I can't imagine they "really don't care".

Fair enough. I admit, all the huffing and puffing on their website about the landlord increasing the rent seems odd. Shut up, go about your business and find a new location.

In Memoriam...
We went there once, in 2014, for my wife's parent's wedding anniversary. I picked up the tab - gulp!
It was truly great fine dining french cuisine. They had an outstanding chef, but the maitre d's personality could rub some the wrong way. Probably the BEST sable fish I've ever had in Victoria. Their "low fat" menu page was a great laugh. After a quick search of my archive I found some pics...

He employed several chefs over the years at Matisse, but the Maitre D'? Well, that would have been one of the owners. Yes, it was a bit of show, but the meals were always exceptional.
We always did the wine pairings with our meals. And he was always more than happy to swap out menu items on the fixed price menu for personal preferance.

I always think of Brasserie as more contemporary French.
It's a shame getting to the Deep Cove Chalet is virtually impossible without a car. They offer a $100 appetizer of scrambled egg & caviar. Now that's French. Their Prix Fixe menus run $62.50 - $80.00.

A new website i see for the Dump Cove Chalet.
My wife and i lived 1 km from them for 24 years. Walked there every year on our anniversary for 10 years plus one or two other meals every year or so with guests and friends.
They don't care about the locals. That's where i met the past owner of Matisse.
I remember 25 years ago the opening page of their menu stated "No soup or salad for dinner. You need to order from the full menu" or some such nonsense
The last time i went there (perhaps 6 years ago), a guy was smoking a cigar at the table beside us while yelling into his cellphone. I mildly complained to the waiter (CRD bylaws, smoking inside, etc.). I didn't get very far....

I've eaten at both Brasserie l'ecole and Deep Cove Chalet. IMO, Brasserie isn't a good substitute, it's more of a bistro - no white table clothes here, but it's certainly great for a steak or burger and a Trappistes Rochefort #10.
The one time we ate at Deep Cove we were not impressed. They burnt the bread and while the lobster bisque and beef wellington were okay, it wasn't good enough to warrant a return trip, especially given how far away it is - and did I mention they burnt the bread!
