The trend over the past decade has been for people to want to live by themselves and not have roommates....
But this co-housing model is like having people you don't choose as roommates. N'est ce pas?

The trend over the past decade has been for people to want to live by themselves and not have roommates. That is one major reason why we have a housing shortage.
Having said that, where these models work really well is in short term rentals. Get a few people travelling together and these are great options. The onsite "social curator" also acts as the onsite building manager.
It's the opposite. The housing shortage has prompted more and more people to live with roommates. Know plenty of friends in their 30's who still share places, specially in the Vancouver area. And if you're in an immigrant community, it's standard to pack a place with as many people as possible.
The economics of "wanting your own place" have never been worse.

the 50-year-old housing shortage crisis?
that's not the trend at all though. never in history has Canada had so many dwelling units per person. although we are last in the G7 for that.
Canada Built 2 New Homes Per Person Last Quarter
Canada is seeing more than two homes completed per person added to the population. In Q3, the quarterly population increase fell to 25,384 people. The number of homes completed actually made an increase to 51,865 homes. This works out to 2.26 homes completed per person added to the population in the quarter. To contrast, during the same quarter last year, this number was just 0.29 homes per person. This is a massive increase, not seen since before the Great Recession.
BC Is Completing 1.83 Homes Per Person
BC’s population grew less than a fifth of last year’s growth, but is seeing completions run a little faster than Ontario. In Q3 the population grew by 5,308 people, with 9,795 homes completed. The ratio works out to 1.83 homes per person the population grew by, almost 5x the ratio last year. A lot more housing is being completed, but not quite the acceleration Ontario is seeing.

Sure, and there was no AirBnB or dozens of thousands of international students or hundreds of thousands of immigrants with money either. Or people screaming bloody murder when someone proposed a tower in James Bay.
Housing will always be a problem but it's hard to stay with a straight face there's no "crisis" where the median household can only afford to buy a small 1-bed in the Westshore or a no-kids condo in town.

Not according to statscan. The average number of people living per household unit has never been lower.

When you live in what was the nicest and most desirable place in Canada to live, housing is always going to be more expensive than elsewhere.
The options are-live somewhere else, rent.

Do many people over the age of 30 really want to live in a glorified dorm?

The graph doesn't account for pandemic years yet, and right before it was already breaking through the high-interest, austerity years.

Probably not. I think this is an attractive option for the 18-29 crowd, especially students. It's nice to take some of the financial risk out of a room-mate arrangement: It always sucked when a roommate was having trouble getting rent together because it doesn't matter that I have all of my portion. If any one person is short/late, the whole house is. With individual leases for each person, you just have to worry about you.
the downside being you do not have much of an idea who your room-mate(s) are going to be. and they may change often.

Ah yes, the "laws of economics don't apply to the best place on Earth" argument.

The biggest problem with the shared concept is bathroom cleaning. We all know men have a genetic flaw that prohibits them from comprehending the concept of properly cleaning the bathroom. The average man thinks sufficient bathroom cleaning means mopping up visible bodily fluids with a wad of toilet paper. This creates domestic conflict.

that's why apartments should have a urinal in every room.

Rob: Have you ever experienced teenage girls in terms of cleaning up after themselves?

Back in my room mate having days, one often took who ever showed up. So not much different really.
